Ingredients
- 4 halibut filets
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 tsp Unsalted Butter
- 1 tsp minced garlic
- 1/4 cup white wine
- 1 tbsp parsley
- 1 lemon, cut into 4 wedges optional

Instructions
- Heat olive oil in a large skillet over medium-high heat until thoroughly heated.
- Pat each halibut filet dry with a paper towel. Then, season each with salt, pepper, and paprika.
- Place halibut fillets in the pan in a single layer, keeping room between each one. Allow to sear for 3-4 minutes on one side until golden brown. Then, flip to the other side and sear for another 2-3 minutes until the fish is opaque and cooked through. Remove fish from the pan; set aside and tent loosely with foil.
- Turn the pan to medium-low. Add butter to the pan and allow to melt. Then, add minced garlic. Cook for 30-60 seconds until fragrant. Slowly pour in the wine; stir. Simmer until the wine reduces by about 50%.
- Add halibut back to the pan and simmer for 1 minute, spooning the liquid over the fish to keep moist.
- Serve immediately with lemon wedges, if desired.
